Early Sunday morning, Stephen Friedman turned back time. He stood in Temple Israel's kitchen in Norfolk, jamming the wooden handle of a hammer into a meat grinder. He had gutted and filleted 50 pounds of whole croaker and 40 pounds of whole bluefish, working until his hands cramped. He flung slivers of flesh into a bin with 75 pounds of rockfish fillets, and tossed the carcasses into a stock pot simmering on the stove. Friedman forced a whitish chunk of rockfish into the top of the grinder with the hammer. "Shalom aleichem," he said grinning. (Roughly translated, that's "peace be with you, brother" in Hebrew.) A flesh-colored tangle of ground fish emerged from the side of the machine and formed a heap in a stainless steel bowl.
